Generation Park Brings Fresh Take on Vietnamese Cuisine to Redemption Square with Bibo’s Bistro & Bar

HOUSTON (April 16, 2018) – McCord Development, Inc., sole owner and developer of Generation Park, announces the first retail tenants to open within Redemption Square, Generation Park’s 52-acre mixed-use corporate lifestyle district. Locally-owned Bibo’s Bistro and Bar, a 2,635 square-foot Vietnamese fusion restaurant, will be the first restaurant on the ground floor of 250 Assay Street, Lake Houston’s first Class A mixed-use office building in Redemption Square.
Bibo’s Bistro and Bar is the second restaurant concept in the Houston area from husband and wife team Mary Huynh and Jon Nguyen. Bibo’s menu will include unique twists on Vietnamese staples and select signature dishes from their original location, like boba tea and pho. The new location will also offer a full bar, including local craft beer, cocktails and happy hour specials to cater to the burgeoning business community in Generation Park. Bibo’s is slated to open in late April.
“We want Houston’s foodie scene to be well represented within our development and this is just the beginning,” said Ian Adler, Director of Marketing at McCord Development. “We’re excited to have Jon and Mary, Lake Houston locals, take their popular Bibo’s concept to the next level at Redemption Square.”
Owners Mary Huynh and Jon Nguyen said they’re thrilled to offer their food to a new group of customers in the Lake Houston area and to be one of first of many local restaurateurs coming to Generation Park’s Redemption Square. “We’re excited to bring our take on traditional Vietnamese food to Generation Park,” said owner Jon Nguyen. “We make everything from scratch so families and businesspeople in the area can come to Bibo’s for a quality, home-cooked meal.”
Other tenants include BB&T Bank, which opened its 24th branch in Houston on the ground floor of 250 Assay St. on March 26 and Sub Zero Nitrogen Ice Cream and Café Rian will open across the waterway from Redemption Square in the West Lake Village Shopping Center.
Current tenants of 250 Assay Street include the headquarters of McCord Development, Inc., Apache Industrial Services and Global Tubing LLC. Generation Park is also home to TechnipFMC’s 173-acre campus, Lone Star College, Stolt-Nielsen Limited’s future corporate campus and GHX Industrial’s headquarters and industrial facility at Lockwood Business Park, the development’s 25-acre industrial business park.
